Sea Salt Baked Potatoes

I don't know what happened, but it has been years since I've baked potatoes. And by baked potatoes, I mean the classic kind - crispy jackets split open to reveal a fluffy white potato interior. The kind of potato flesh that likes to drink butter and mainline salt. But, on a quick grocery run after returning from Marfa, the russets were calling me. I remembered a simple, sea-salt baked potato recipe in Nigel Slater's Tender, grabbed some arugula, and was pretty confident I had everything else I'd need at home.

Baked Potato Recipe

On the road trip front, a number of you have asked, somewhat incredulously, why we would drive to Marfa, Texas. To which I sort of tilt my head, and start thinking more about it. There seems to be a long answer and a short answer. The short? We went to see visit this. The longer answer - we drove through Palm Springs, and Valentine, Canyon de Chelly, and Willcox. And cooked at beautiful rest stops, and took lots of pictures, and caught up on magazines, and sat in the sun, and saw this, and ate dinner outside more nights than not. I've driven through the Southwest and parts of northern Mexico a good number of times now, and West Texas is particularly beautiful. When you're out in the middle of the desert, its quiet. So so so so quiet. I love it.

Baked Potato Recipe

Quesadillas

This is what I've been making for lunch lately. My five-minute lunch. Literally. I thought it would make sense to share it, in part, because it's ridiculous how often I make it. Or some slight riff on it. It's a quesadilla - sort of. I don't really like all-cheese, white tortilla quesadillas, so this is my take. Corn tortilla - unda style, a bit of cheese, fresh herbs, and a dollop lemon-zested greek yogurt or creme fraiche. The egg helps make it more substantial and extra good.

Quesadilla Recipe

It's occurring to me that you might not know what unda-style means. I didn't until a couple years back. But there's a kati roll place nearby that makes kati rolls "unda-style" - which means, for an extra dollar, they throw a beaten egg down on the grill and top it with buttery-flaky roti bread. It sets, they fill and roll it. We joke around the house that I make everything unda-style now - crepes, quesadillas, anything flat and round.

Quesadilla Recipe

The best part about this style of quesadilla is that you can skip the cheese-fest. A little cheese? Great. But I'm guessing a number of you will agree with me - lots of quesadillas are just overkill in that regard. Instead, I try to work in a bit of creaminess through something like the yogurt. Or a smear of avocado. I made another version last week with a handful of smashed beans, avocado, a bit of grated cheddar, and roasted tomato salsa. But I like this version in particular, the crunchy, toasty capers and cream are nice, and a tad bit unexpected.

Open Question: are you allowed to camp overnight with a campfire next to a river?

Hi my husband wants to take our children for an overnight adventure. We live in rural Norfolk and he just wants to take them to a nearby river, set up a tent, have a campfire, fish (they have fishing licence) and stay overnight. Does anyone know if any of this is against the law? My husband works as a support worker and has a clean CRB form and so does not want to put anything at risk just for a night of camping. The place he has in mind has no signs saying "no overnight stays" like some laybys and stuff have but I dont know if the lack of this makes it legal.

Please help if you can

Cucumber Peanut Salad

In addition to the Sharpie pens, the half-full mug of tea, the snapshots, the magazines, the letters to be mailed, and the stamps to go on those letters, I have two new cookbooks on my desk. Two books to really dive into. I've mentioned this before, but a number of us have been choosing cookbooks to focus on, and we've just chosen these to be next. So, if you happen to have Nigel Slater's Tender V. 1 and/or Sanjeev Kapoor's How to Cook Indian, please feel free to join us. These are the picks for the next two months, which should give you enough time to buy them or check them out from the library if you like. We did Breakfast, Lunch, Tea: The Many Little Meals of Rose Bakery last, and Moro East and The Essential New York Times Cookbook before that. Today's Cucumber Peanut Salad was my first foray into Sanjeev's book and it doesn't disappoint - chopped cucumbers, spices, toasted peanuts, coconut, and green chiles come together in a refreshing but surprisingly substantial salad.

Cucumber Peanut Salad Recipe

Tender V.1 is by Nigel Slater, and is one of the most beautiful cookbooks I've purchased. At its most simple and basic it is about one man cooking from his garden. But, as anyone who has spent much time with a Nigel Slater book knows, the simplest ideas, or ingredients, or cooking techniques often develop into something completely captivating. And his recipes deliver. So, this pick was a no-brainer. How to Cook Indian was a bit of a wild card choice. After my book signing in Berkeley, I was invited by the shop to choose any book I liked. I tucked the massive orange Indian volume under my arm, went home, and spent hours the next morning tagging recipes - so many! And today's salad was one of them.

Cucumber Peanut Salad Recipe

I took some liberties with this based on personal preference, and readily available ingredients. That's just how I roll when it comes to cooking Indian these days. I don't always have all the ingredients on hand, but I try not to let that deter me. Instead of trying to get thing perfectly "authentic" or as written, I wing it a bit, based on what I think will taste good within the general framework of a recipe. So, for this salad - I didn't have fresh coconut, but I did have big, dried coconut flakes. I knew I could toast them, and they'd be great. So I went with it. I like to leave some of the peel on my cucumbers - so that is what you see here. That sort of thing. I forgot to grind the peanuts - the sky did not fall.
